Rosemary grown at Stafford Lane Estate is used to infuse Leccino or Barnea olive oil. Rosemary and olive trees are natives of the Mediterranean so naturally compliment each other in cooking. Rosemary has a well-known reputation for aiding the digestion of fats and is a favorite herb in Italian cooking. It combines well with garlic, beef, lamb, veal and game. Use Rosemary olive oil to flavour soups, stuffing, sauces, marinade, and baked vegetables. Wonderful to use when mashing potatoes or try drizzled over new potatoes.
